Broccoli Cheese Soup

Not your mama's broccoli cheese soup....

More like a broccoli lover's soup! I LOVE the bright green color.

I followed this recipe. It's not vegan, but it's very delicious! I can't remember the last time I bought cheese to cook with, so I think I'm doing well at lessening my impact on the environment, my body, and animals. Sometimes cheese is just delicious.... especially when paired with broccoli!

Served with a slice of Ezekiel bread. It's so good, and eating something this vibrant makes you feel good.

Not bad for a cheesy soup. I got 5 servings out of this recipe.. I can't wait for lunch tomorrow!

And for dessert....

Oatmeal Chocolate Chip Cookies! Only one, though..  for now ;) They are very good; I definitely recommend them. Dillon and I had fun baking last night!

On the marathon front I'm doing well - feeling confident and excited! Today was a cross train day, and Dillon and I went on an hour long walk in the snow. It was a nice change; Plus we went out to breakfast at Dunn Brothers, which was awesome. I love coffee and a muffin in the morning!

Dillon and I plan on relaxing for the rest of the evening, which sounds great to me! I hope you enjoyed your weekend!

Here We Go!

No, I'm not talking about Bud Light. Ick.

A year or 2 ago I wouldn't ever imagine I would be doing this...

I think I may be crazy - 26.2 miles is a long way!

But I can do it because I'm a strong, determined woman. Plus, I have a plan.

I've also been hanging out on No Meat Athlete for some great advice. It's such an awesome site; I can't believe I haven't checked it out more in depth sooner. I even have one of their shirts!

I'm excited to document most of my journey to 26.2 here. Should be fun :)
